The Chinese food ‘education’ continues.

Chinese ‘takeaway’ chicken chow mein – simples !

One of the easiest ‘fakeaway’ dishes you’ll ever make utilising 3 simple cooking methods.

Ingredients-
1½ tbsp vegetable oil
½ small onion, sliced & 1/2 a carrot thinly sliced
2 pre-prepared poached chicken breasts
¼ tsp salt
2 nests of pre-prepared noodles
1 tbsp dark soy sauce
1 tbsp light soy sauce
Good handful of bean sprouts
2 spring onions, diced, to garnish

Method –

1. Place the whole chicken breasts in a saucepan of boiling water and poach for 10 minutes. When cooked drain and cut into whatever size portion pieces you want.

Dice the cooked chicken breasts and set aside.

    2. Add your dried noodle nests to a pan of boiling water (I used a brand called ‘lucky boat’ because I god dam need some luck at the moment). Boil for 3 / 4 minutes, drain and run under cold water to stop the cooking process then set aside for 10 minutes.

Set the noodles aside once cooked after they have been drained and covered in the cold water to stop the cooking process.

    3. Stir frying everything together in a wok.

    Method –
Add the oil to a wok.

Once hot add the onion and fry for 30 seconds to brown and toss in your carrot.

Add in the chicken breasts with the salt, cook for 2 minutes.

Add in the precooked noodles. Move around the wok for 2-3 minutes.

Add in the soy sauces again moving around the wok ensuring everything is coated.

Add the beansprouts and cook for 3 minutes again moving around the contents of the wok.

    Serve with chopped spring onions.

Quick, simple, hassle free and tasty.
