
A simple yet stunning dish made with everyday supermarket ingredients. This beautiful dish is a regional dish which originates from Guangdong in China and it is exactly what it says.
A beautiful sauce mixed with crab meat and finished off the heat with a whisked egg white which thickens and holds the sauce together is just a delight.
For Christmas as I was a good boy Santa delivered me a cookbook which I’d desired. This wonderful book is over 700 pages long and I’d say well over 1000 recipes catering to all foods across China. Yes it was £40, but oh my days it’s well worth it due to the wonderful crafted pages and images. Well worth an investment!!

The recipe and method below was taken from this book, on page 440 if interested.
Ingredients-
For the sauce –
90ml of chicken stock
1/2 tbsp or cornflour
1 tsp of salt
1 1/2 tsp of sugar
Pinch of white pepper
Rest of the dish –
2 tbsp of vegetable oil
1 head of broccoli cut to use the florets only
3 garlic cloves finely chopped
150 /175g of crab meat
1 egg white beaten
Cooked & steamed jasmine rice to serve.

Method
To make the sauce. Take the chicken stock, cornflour, 1/2 tsp of salt & 1 tsp of sugar along with a pinch of white pepper and whisk well. Once done sat aside.
Bring a sauce of water to the boil. Add in 1/2 tsp of salt, 1/2 tsp of sugar, 1/2 of the vegetable oil to a nice simmer. Once simmering add in the broccoli florets, I love how they go a really vibrant green colour. Cook for just over a minute. Drain and place on your serving plate.

As you’re doing so heat the rest of the vegetable oil in a wok. Once it’s. Nice and hot add in your diced garlic and stir fry for 3 minutes.

As the garlic just starts to brown add in your pre-made sauce and bring to a simmer, which will not take long…….

Once the sauce starts to simmer add in your crab meat giving it a good stir……..

Add in the remaining salt & sugar then the whisked egg whites and take the wok off the heat stirring as you do so.

Stir for a minute or so to cook the egg whites. Just right at the end add a splash of sesame oil, not too much as this will overpower the flavours. You will be left with this amazing thick sauce.

Plate up your jasmine rice, then pour over the crab sauce over the broccoli.


Quick and simple meal along with being healthy.
