
This is a dish I’ve wanted to cook for a while, and no better time to cook it on Father’s Day. Nice to put some music on and step into the kitchen to chill out and shut off.
The dish itself was very easy to make, getting a chicken to stand up in the oven with a can of lager up its arse was a different story !
If you have one of those ‘dome’ type BBQ’s like an ‘Egg’ this is perfect. Quite easily place it in with the lid down and leave for a couple of hours!
Ingredients-
I x 440ml can of your favourite beer or lager
900g (2lb) whole chicken
FOR THE MARINADE
100ml rapeseed oil
2 tbsp garlic and ginger paste
I tbsp paprika
I tsp ground cumin
I tsp dried oregano
½ tsp red chilli powder
I tsp ground turmeric
Small bunch of coriander, blended with a little water
Salt and freshly ground black pepper to taste.
Method –
Place all the marinade ingredients in a bowl apart from the rapeseed oil.

Blitz the contents of the bowl to create a paste.

Add the rapeseed oil and whisk for a minute to combine the ingredients.

Cover the chicken with the marinade. I parted the skin from the breast meat and placed the marinade inside this cavity.


Allow the marinade to work its magic for a couple of hours, for the best results leave it overnight.

Preheat your oven to 180c. Once it’s at the desired temperature sit your chicken on a can of lager of your choosing. This is tricky trust me! Roast the chicken for 2 hours. I also parboiled some potatoes and added them after an hour to roast in the chicken marinade in the bottom of the roasting tray.

After two hours the chicken was removed from the oven and allowed to relax. Warning, watch the remaining lager in the can, it’s very boiling and could quite easily take your skin off.

I placed the potatoes on another tray to crisp them up for another 10 minutes in the oven.

The chicken was then flaked up to have with a salad and roasties.

Such a delightful dish. Proper flavour sensation and I’ll do it again for sure !
