
Recently this has been one of my favourite dishes. Such a rewarding dish full of flavour.

Ingredients- 2 green chillies roughly chopped, 2 tsp coriander seeds, 1 tbsp fennel seeds, 2 tsp cumin seeds, 1/2 tsp fenugreek seeds, 400g tin of chopped tomatoes, 1 red pepper chopped, 1 tbsp rapeseed oil, 1 tsp mustard seeds, 2 onions finely chopped, 1 tbsp garlic and ginger paste, 1/2 tsp ground turmeric, 1 tsp chilli powder, salt, 1 tsp sugar, 1 cup of plain yogurt, 1 pack of paneer cubed, 3 tbsp chopped coriander, 5cm of ginger cut into matchsticks plus the juice of 1 lemon.
Take a dry pan and fry the green chillies with the whole spices. As the kitchen starts to smell fragrant and spices begin to toast remove them from the heat.

Empty the pan into a mortar and pestle and grind to a paste.

Take the tomatoes and red pepper and place in a blender and blitz into a smooth purée.
Heat another pan, add the oil. Add the mustard seeds and as they start to pop add the onions and fry for 5 minutes. Add 2 tbsp of the pre-made toasted spice mix.

Add the garlic and ginger paste, mix well then add the turmeric and chilli powder then frying for 30 seconds or so.

Add the purée mix of pepper and tomato. Cook until this becomes nice and thick.

Add the yogurt, a tbsp at a time else it will curdle.

Add 1/4 of a cup of water to thin the sauce then simmer for 3 minutes or so.

Add the cubes of paneer on a low heat and cook for 3 to 5 minutes

Gentle mix these in not to breakdown the paneer so they are coated in the sauce.

Add your salt and coriander. Stir in.

This beautiful dish was served with steamed rice.

Such a great taste. The paneer is such a favourite of mine. So many flavours in the dish along with it being healthy.
