
Quick, simple, delicious and economical dish. Anyone looking for delicious food on a budget this is a dish for you! Just love this dish. Quite easy to get lost in the romance of cooking this dish.
It’s quite easy for this dish to be an everyday dish, prepared in advance which actually gets better as it sits in the fridge.
Ingredients- 4 tbsp of rapeseed oil, 1 tsp cumin seeds, 4 cardamom pods bruised, 2” cinnamon stick, 2 red onions diced, 2 tbsp of garlic & ginger paste, 1 tsp chilli powder, 1/2 tsp turmeric, 2 tsp ground cumin, 1 tsp ground coriander, 3 large tomatoes diced, 2 or 3 tins of chickpeas drained and washed. To finish add 1/2 tsp garam masala, chopped coriander, juice of 1 lemon plus diced fresh ginger, green chillies diced (optional) .
Heat the oil, when hot add the cumin seeds, cardamom pods & cinnamon stick. Temper these spices for 30 seconds or so.

As they start to release their amazing smells / flavours add the red onions then fry for 5 minutes.

Add the garlic & ginger paste, ground spices along with the tomatoes. Give this a good stir coating everything with all these amazing flavours.

Once start to smell amazing add your chick peas. Stir well, if you like a little sauce add a little water at this stage.

Simmer for 5 minutes then add a little salt. To finish add the garam masala, chopped coriander and green chillies if using plus the lemon juice.

Such a beautiful dish. Full of flavour. The dish is so economical and can feed you for 3/4 days.
