
Something very delightful about this dish.
Some might think itās a lot of fuss to create this dish, but trust me, itās well worthwhile.
So many flavour combinations itās unreal.
Ingredients- makes 3 toasties
2 tbsp of vegetable oil
1 tsp of cumin seeds
Between 10 / 20 curry leaves
1 onion finely diced
3 green chillies finely diced
1 tsp of turmeric
1/2 tsp of chilli powder
2 tbsp of garlic & ginger paste
2 potatoes peeled and cut into very small cubes
Salt & pepper
Handful of chopped coriander
2 tomatoes finely sliced
1/2 a red onion finely sliced
1/4 of cucumber finely sliced
1/2 red pepper finely sliced
200g of cheese sliced
4 tbsp of natural yogurt
2 tsp of mint sauce
Handful of chopped coriander
6 slices of white bread
A large knob butter per toastie
Method –
Heat in a frying pan the vegetable oil. Once the oil if hot add the cumin seeds & curry leaves. Fry these for about 30 seconds, the kitchen will become nice a fragrant.

Add 30 seconds of the cumin seeds sizzling away toss in the chopped onion. Fry these together for 5 minutes or so. You want the onions to take on the flavours of the cumin seeds and become nice and translucent.

Then in quick succession, you start to build the flavours of your toastie. Add in the chopped green chilliesā¦ā¦

Then the turmeric, chilli powder plus the garlic & ginger pasteā¦ā¦..

Give the pan a good stirā¦.flavour party central here we comeā¦ā¦.

Once all the ingredients are nicely mixed together add in the chopped potatoesā¦ā¦.

Again, give the pan a good stirā¦ā¦.

Add enough water just to cover the potato mixture. Bring this to a simmer. Simmer for 10 minutes or so until the potatoes are soft to touch and the water has reduced down to create a nice thick sauce.

Remove from the heat, add in the chopped coriander with the salt and pepper. Give the pan a good stir and set aside to cool slightly.

Now to build your fillingā¦ā¦

Have all your ingredients sliced and ready. Mix the yogurt, mint sauce and coriander together. Spread the minty yoghurt on both sides of your bread. Spread over the potato mixture on both sides. Then layer tomatoes pepper one side and cucumber and red onions the other. Add the cheese. I used blue cheese due to the intense flavour it gives.

Heat the large knob of butter in a frying pan. Once melted added your sandwich and fry.

After a couple of minutes gently turn over the sandwich and repeat the process.
