Full English breakfast pie 👍🏻

Who doesn’t love a pie ? Who doesn’t love a full English breakfast ? Why not combine the two together ?? Well, this superb recipe from The Hairy Bikers does just that !! This is a brilliant recipe using wonderful ingredients.

This dish was a lot of fun to create. I’m al says learning about pastry so this dish on a Friday night was the perfect way to shut off, play with flavours and step outside of my comfort zone with pastry.

Ingredients-

1 x 500g block of shop bought puff pastry

Plain flour for dusting

1 onion finely diced

100g shop bought pack of bacon lardons

6 eggs

3 sausages with their skins removed

6 cherry tomatoes

A handful of mushrooms

1/2 tsp of oregano

2 tbsp of tomato ketchup

2 tsp of a hot sauce

A couple of dashes of Worcestershire sauce

50g of grated cheddar cheese

A good pinch of salt and pepper

Method –

Preheat your oven to 200c, place a small baking tray in the oven to heat it up.

Cut the block of pastry into two pieces. One third & two thirds. Roll the large piece on a flour med surface.

Place the pastry into a small round pie dish.

Mix the bacon lardons and diced onion together in a small bowl.

Place the onion and bacon lardons mix into the pastry case.

Crack four of the eggs to the pie mix.

Season well…..

Then gently break the egg yolks with a knife and swirl the yolks around a little.

Whisk the remaining two eggs in a bowl and tip over the pie mix but leave at least two tablespoons to brush the pastry with.

Remove the skin from the sausages. Break up the sausages into small pieces and place them into the egg mixture along with the cherry tomatoes which have been cut into half plus the oregano.

Add the chopped mushrooms.

Place the tomato ketchup, Worcestershire sauce and hot sauce into a bowl and mix well.

Drizzle the sauce mix over the pie ingredients.

Follow the sauce mix with the grated cheese.

Roll out the remaining pastry. Egg wash the pastry egg in the tin and trim up the pastry.

Add the rolled pastry top to your pie and egg wash the top. Make a small hole in the top to allow the steam to escape.

Place the pie tin on the preheated baking tray and cook in the oven for 30 / 35 minutes. The pie will be lovely and golden.

A wonderful pie full of flavour.

I served mine with what else but…..baked beans !!!
