Pork & apple sausage meat with rigatoni ❤️

This….is my first written and created pasta recipe. Using flavours & ingredients which are cupboard essentials in my house. Quite proud of this and the fact it tasted really good shows my I’m on the right path.

Any dish written in Italian sounds better, even if it is just pork and apple sausage meat with rigatoni pasta!

Ideal dish for when you’re short on time. From start to finish this dish was created in 15 minutes.

Ingredients- olive oil, a finely diced onion, 2 garlic cloves finely diced, 4 pork & apple sausages removed from the outer skin, handful of button mushrooms diced, 1/2 tsp of dried chilli flakes, 1 tsp of fennel seeds, 4 / 5 sprigs of fresh thyme leaves, 100ml of white wine, 150ml double cream, large piece of blue cheese flaked into small pieces, salt & pepper, rigatoni pasta cooked in salt water.

Method-

Heat a glug of olive oil in a heavy based pan. Once the oil is hot add the diced onion & garlic. Fry for 5 minutes until the onions start to caramelise.

As you put the onion & garlic in the olive oil put a pan of salted water on to boil. Cook the pasta as per the packet instructions. This rigatoni pasta was 89p in Sainsbury’s today!

Once the onions have taken on a nice colour add your sausage meat and mushrooms to the onion mix. You want to fry off the sausage meat so it’s nice and brown.

After minutes add the thyme leaves, chilli flakes and fennel seeds. Give the pan a good mix and fry for a further 2 minutes.

Add the white wine. This will come to a rapid simmer. Reduce the wine down until you have a half left. This will only take a couple of minutes.

Add in the double cream, again giving the pan a good stir.

The cream will come to a simmer. The sauce it taking shape nicely. Flake in the blue cheese. This Stilton was amazing and will add a great flavour to the dish. Add as much or as little as you want.

Drain off the pasta but keep a bit of the cooking water. Add this to the sauce. This will finish your pasta sauce. Season well with salt and pepper.

Add the rigatoni pasta to the pan and mix well. You want to coat the pasta with this beautiful sauce.

Serve and get stuck in !!!!
