Homemade ‘tandoori’ marinade ❤️

Tandoori marinade

I’ve been making this marinade for a few years now. Once you make the switch to making your own you will not go back to ‘shop bought’ versions.

This takes less than 5 minutes to with a few hours doing its magic in the fridge ahead of roasting.

I’ve been making this that long now I no longer go by measurements, just what feels right. However, for the point of sharing I’ll just list down what I’ve roughly used for 1 kilos of drumsticks. Also, this marinade can be put aside in the fridge until required.

Ingredients-

4 large heaped tbsp of natural yogurt, 2 tbsp of garlic & ginger paste, juice of one lemon, 2 green chillies finely diced, 1 tsp of chilli powder, 1/2 tsp of turmeric, 2 tsp of cumin powder, 2 tsp of coriander powder, 1 tsp of garam masala, 2 tsp of salt, 3 tsp of ground black pepper, 2 tbsp of tandoori masala powder, 1 tsp of paprika, 1/2 tsp of fenugreek powder, large handful of chopped coriander, 2 tbsp of grated Parmesan cheese & a pinch of red food colouring.

Give all the mixture a good mix to combine all the flavours. This will naturally thicken.

Add in your chicken, can either be bite site pieces or drumsticks or wings. I had drumsticks, as you can see below, I made sure they were covered fully then placed in the fridge for 6 hours.

They were then roasted in the oven for 50 minutes at 180.

So so tasty. The chicken is still moist inside and full of flavour.
