
Love paneer, love flavoursome curries….love this dish.
This simple yet stunning recipe taken from a lady called Suki Pantal who I’ve followed on Instagram for a while and this is from her first cook book – Garnish with Garam Masala. a regional dish from when she was living in Delhi.
The only change I made to the recipe was using yellow peppers over the green which she suggested.
Ingredients-
Homemade kadhai masala spice – spice mix 1 1/2 tsp of cumin seeds, 1 tbsp of coriander seeds, 1 tbsp of black peppercorns, 1 tsp of fennel seeds, 3 to 4 dried red chillies and a pinch of salt. Dry roast the spices, allow to cool the grind into a powder.
1 packet of shop bought paneer (250g), 3 tbsp of rapeseed oil, 2 small onions finely diced, 1 green (yellow) pepper roughly chopped, 1 medium onion cut into cubes, 200g of chopped tomatoes, 1 tsp of garlic and ginger paste, 1 tsp of cumin seeds, 1 bay leaf, 1 tsp of ground coriander, 1/2 tsp of ground turmeric, 1 tsp of chilli powder, 1 tsp of dried fenugreek, 75ml of water, chopped coriander and 1/2 tsp of garam masala to garnish.
Method-
Heat a frying pan, added the paneer which needs to be cut into small cubes, yellow pepper and cubed onions. Add 1/2 tsp of the kadhai masala mix and coat the pan contents. Fry the pan contents for a couple of minutes then put them aside.

In another pan heat the oil. Once it’s hot add the bay leaves and cumin seeds. Fry these for a minute or so until the cumin seeds sizzle and pop. Add the diced onions and fry for 10/12 minutes until golden brown.

Once the onions have a nice colour add the garlic and ginger paste frying for a further 2 minutes.

Add the ground spices – turmeric, coriander, dried fenugreek & – 1 tsp of kadhai masala mix. Mix all the ingredients together and fry for 3 to 4 minutes, add a tbsp of water to help bring the flavours together plus it prevents them burning.

The kitchen will smell amazing…..

Add the tinned tomatoes, salt and chilli powder. Cook this until the oils start showing at the sides of the pan which will only take a couple of minutes.

Add the warm water. Cook this for a further 5 minutes.
Add in a he pre-cooked paneer, peppers and onions. Cook this on a high heat for 2 minutes.

Finish the dish with the garam masala and chopped coriander.

I served mine with steamed rice.
