Korean salmon & broccoli tray bake

This beautiful simple dish has to be one of the easiest things I’ve made yet one of the tastiest!! Again, looking to remove the meat content and focus on fish.

A simple marinade, humble ingredients, then roasting in the oven, as simple as it gets, especially as the marinade consists of 5 ingredients!!!! The star of the show has to be the ‘hot’ sauce. For me I don’t like food too hot, I’ve always preferred flavour over heat. However, this time as the marinade was only a few ingredients I had to go with the recipe and I’m glad I did.

Ingredients

Marinade – 3 tbsp of hot sauce ( Cholula), 2 tbsp of light soy sauce, 2 garlic cloves diced, 2 tbsp of sesame oil, 1 tbsp of lime juice.

Main ingredients- 1 large head of broccoli cut into small bite sized florets, a large piece of salmon again cut into bite size pieces with skin on, 3 / 4 spring onions finely diced, 1 tbsp of sesame seeds.

Method –

Preheat your oven to 200 c.

Take all the marinade ingredients adding them to a large bowl.

Whisk the ingredients together to slightly thicken the marinade.

Marinade finished. As simple as that.

Take 2 tbsp of the marinade and add it to your broccoli. Give this a gentle stir and leave it for 30 minutes.

Add the salmon to the remaining marinade. Place evenly and again leave it to marinate for 30 minutes.

Line a baking tray with some grease proof paper. I drizzled a little groundnut oil on the paper to prevent the broccoli and salmon sticking.

Evenly place the broccoli on the tray and roast for 10 minutes.

After 10 minutes add your salmon to the same tray. Place back in the oven for another 15 minutes, longer if you don’t your salmon too pink. Add the left over marinade.

After 15 minutes remove the salmon and broccoli from the over and garnish with the spring onions and sesame seeds and serve.

I served mine up with some pre-made steamed basmati rice. If you want to add more heat you can add some dried chilli flakes at this point, I didn’t !
