I loved cooking this dish, I actually think, this is my best dish to date. The taste and flavours were unreal with many different layers of flavour which just keep coming with each mouthful. It’s such a simple dish to make which makes it even better. What can be better…..a curry that you can make in minutes ??? Especially when life is so fast at the minute!! Believe it or not, it’s actually a very healthy dish to which ticks another box at the minute.

Ingredients- 500g of lean beef mince beef, 1tbsp of ground cumin, 1 tsp of ground coriander, 2 tsp of chilli powder, 1 tsp of salt, 1 tbsp of ground pepper, 4 tbsp of garlic & ginger paste, 1 egg, 1 tbsp of rapeseed oil, 1 tsp of black mustard seeds, 10 curry leaves, 2 onions finely diced, 3 tbsp of diced garlic, 2 green chillies finely diced, 400g tin of chopped tomatoes ( game changer) 400ml – 1 tin of coconut milk, 2 tbsp of soy sauce, salt, chopped coriander.

Method- Start by making the kofta’s. In a large bowl mix the mince, cumin, ground coriander, 1 tsp of the chilli powder, salt, black pepper, garlic and ginger paste and the egg.

Mix all the ingredients together with your hands and set aside until you’re ready to add them to the sauce.

Heat the oil, once the oil is glistening hot add the mustard seeds and fry until they start to crackle.

Reduce the temperature, add the curry leaves stirring for 30 seconds or so.

Add the onions and fry for 5 minutes until they are nice and soft.

Stir in the garlic slices and chillies frying for a further minute.

Add the turmeric and stir well.

Now this is the game changer for me. I’ve seen the Mutti tomatoes advertised by a number of the top chefs for a number of years. I’ve never bought them due to the cost, however Morrisons had them on offer so I officially joined the Mutti appreciation club. Utter game changer. I do believe they are the reason this dish was sooooooooo good. Add the chopped tomatoes….

Follow this with the light soy sauce….

Flavours coming together

Give this a good stir and bring it to a simmer.

Once the sauce has come to a simmer add all the kofta balls.

Cover all the kofta balls and simmer for 10 minutes.

Very important to scrap all the caramelised sauce of the sides of the pan as a lot of flavour there. Add your chopped coriander and serve🌿

I just served mine up with shop bought naan breads to mop up the sauce. Plus my rice intake is a little high at the minute ( nurse warning 😮).

You’ll not regret making this dish, it’s absolutely amazing….
