
I had a similar dish whilst away with work in Leeds at an amazing street food restaurant called Bundobust. This authentic restaurant offered quite a large range of street food dishes which took the taste buds to another level. No meat dishes on the menu, loved this concept. They even had their own brewery!! Bonus!!!
I had this dish whilst eating here and it inspired me to try and recreate it. Here below is what I had whilst eating their. It was a meal for two which I shared over a few beers with a work colleague.
Mung bean chatpata, egg bhurji, paneer tikka, bhajis, bundo chaat, tarka dhal & rice plus palak kofta. Mind blowing.

Ingredients – 3 eggs, 1/8 tsp of turmeric powder, 1/4 tsp of salt, 1/2 tsp of cumin seeds, 10 curry leaves, 1 red onion finely diced, 1 green chilli diced, 1 tsp of garlic & ginger paste, 1 tomato finely diced, 1/2 tsp of chilli powder, 1 tsp of garam masala, 1 cup of frozen peas & large handful of chopped coriander.
Method – break the eggs into a bowl, add the turmeric & salt then whisk together and sit aside.

Heat the oil in a pan, once hot fry off the cumin seeds until they start to pop.

As the cumin seeds start to pop, add the diced onion and green chillies, fry off for 5 minutes or so.

As the onions starts to take a nice colour add the garlic and ginger paste and cook this out for a minute or so.

Once the garlic and ginger paste has cooked out and your kitchen smells great add the diced tomatoes, again cooking these down for a couple of minutes.

Once the tomatoes have taken on the flavours add your dried spices – chilli powder and garam masala, mixing in the pan so that they take on and coat all the other ingredients.

Mix the dried spices well…..

Once the pan is coated nicely….add your egg mix.

Turn the eggs around the pan as if you were making scrambled eggs.

The more you mix the more the eggs scramble which is the desired outcome you want.

Once you’re happy with your scrambled spice eggs add the frozen peas ….

Quickly followed by the chopped coriander….

Mixed the pan well and cook out the peas….then add the garam masala.

I made some paneer kebabs so accompany the egg Bhurji.
