Spicy fried potato curry with paneer and peas ❤️

This is a lovely dish. The flavours burst through giving you a beautiful tasting plate of food. It’s a fantastic way of lifting potatoes to another level, but the surprising element of the dish….is the peas. Trust me, try the dish and you’ll understand what I’m rambling about.

Ingredients- 4 tbsp of vegetable oil, 250g of waxy potatoes such as a Charlotte, peeled and cut into cubes, a small pack of shop bought paneer again cut into small cubes, 12 curry leaves, 1 tsp of cumin seeds, 1 onion finely diced, 1 heaped tbsp of garlic & ginger paste, 1/2 tsp of turmeric, 3 finger chillies slit lengthways, 250g of small vine tomatoes, 1/2 tsp of garam masala, 175g of frozen peas.

Method- heat 2 tbsp’s of the oil in a pan, I used my Indian Karahi pan for this, once the oil is hot add the pieces of potato and shallow fry them for 6-8 minutes to give them a beautiful crispy texture.

Once they are cooked, lift them from the oil with a slotted spoon and set them aside.

Add another tbsp of the oil and repeat the process with the paneer.

Add the remaining oil, once hot add in the curry leaves and cumin seeds allowing them to sizzles for a few seconds.

Add the onion along with the garlic & ginger paste. Fry this off for 5 minutes or so just as the onion is starting to brown.

Add the turmeric, giving it a stir quickly followed by the diced tomatoes and chillies.

Fry this off until the tomatoes have started to break down which is the start of a beautiful sauce infused with flavour.

Add the potatoes back along with a tbsp of water and 1 tsp of salt.

Cook this for another 5 minutes. Once the sauce begins to thicken add in the paneer, garam masala and the peas, cooking for another 2 minutes or so.

After two minutes the dish is ready. This is a perfect main meal or a wonder side dish.

As I was eating alone that night I nailed the lot as it was sooooooooo moreish !!!
