Classic Mowgli prawn curry

What a joy of dish this was to make !! A simple dish which took less than 20 minutes to make with very little preparation.

A ‘sweet’ tasting dish due to the perfect marriage of ingredients. I’ve mentioned it before, the more Indian / Asian cooking you do the more you build up your larder to make virtually any dish. Again, the beauty of this dish was the fact I had everything in the cupboard, I picked up some prawns at the weekend which needed eating plus the cooking time of just under 20 minutes.

Ingredients- 4 tbsp of vegetable oil, 1 1/2 tsp of panch phoron, chillies deseeded and finely diced, 1 tin of chopped tomatoes, raw prawns, 1/4 tsp of turmeric, 1/4 tsp of chilli powder, 1 tsp of brown sugar, 2 tsp of English mustard, large handful of frozen peas & 1 tsp of salt.

Method – heat the oil in a large heavy based pan. When it’s hot add the panch phoron and green chillies and fry for 30 seconds.

Add the chopped tomatoes and fry for 5 minutes until the oil separates around the pan from the tomatoes.

Add the ground turmeric, chilli powder, sugar and mustard paste and fry for 3 minutes.

Add the prawns, frozen peas, salt and cup of water, mix well then cook for a further 6/8 minutes to thicken your sauce.

I served mine with some steamed white rice. I have to say this dish was heavenly ❤️.
