
My son who was 11 at the time of writing this post asked me for a Indian inspired Sunday lunch! Now I’m not going to miss the chance to do this!! This dish was the perfect way to bring him into the Indian food fold due to it being packed with flavour and goodness with very little heat. The dish itself is named after its roots in the region of Agra.
Ingredients- 1/3 of a cup of vegetable oil, 2 large onions finely diced, 2 large heaped tbsp of garlic and ginger paste, 3 tbsp of garam masala, 4 green cardamom pods, about an inch long piece of cinnamon stick, 1/2 tsp of turmeric, 1/4 tsp of chilli powder, chicken thighs & drumsticks roughly about 750g, 1 tin of chopped tomatoes, 1 tsp of salt, 1 tsp of sugar, 200g of spinach, zest of a lime and a large handful of coriander leaves to finish.
Method – in a large heavy based pan add the oil. When hot add the onions, ginger & garlic paste and fry for 8 minutes or so until the onions have a nice colour.

Add the garam masala, cardamom, cinnamon, turmeric, chilli powder and chicken thighs and fry for an additional 5 minutes or so browning the chicken allowing it to take in the flavours.



Add the tinned tomatoes, 450ml of water, salt, sugar and bring to the boil. Reduce the heat and simmer for 40 minutes.

To finish add the spinach and lemon zest. Once the spinach has wilted add the chopped coriander.

Plus as my son wanted an Indian alternative Sunday lunch I picked up a few nibbles along with making an onion salad

So we all sat around and ate together in he livingroom whilst watching the footy on a Sunday afternoon ❤️
