
One of the biggest fears in the kitchen is making your own sauces. People are put off as they think it’s too complicated or it takes too long…especially when we live in a society rushing around a million miles per hour.
Trust me, making your own sauces as far more rewarding!! Take the time and remove the fear!!
This simple everyday homemade Katsu curry sauce takes less than 10 minutes to make and has 10 ingredients that are probably everyday ingredients for most households / kitchens. This sauce can be made to be used straight away or allowed to cool and placed in the fridge to be used a few days later.
Ingredients- little bit of vegetable oil for frying, 1 onion finely diced, 1 garlic glove finely diced, 1 small piece of grated ginger, 2 tbsp of any curry powder, 1 tsp of turmeric powder, 1 tbsp of plain flour, 300ml of vegetable stock ( I just use one of those Knorr cubes in boiling water) 1 tbsp of light soy and 100ml of coconut milk.
Heat your pan in a little vegetable oil. once the oil is hot fry off your onion, garlic and ginger. This will only take 2/3 minutes until the onion goes translucent.

Add in the curry powder and turmeric. Give it a good stir coating the onion/garlic/ginger mix.


This will come together very quickly, a beautiful dry mixture that will have your kitchen smelling great!!
Add the flour and mix together quickly. The flour is your thickening agent.

Add your vegetable stock a little at a time stirring as you do. This will thicken very quickly as the flour will be doing its magic.



Add in the light soy sauce.

Quickly followed by the coconut milk.

Give this a stir, it will come to a simmer in seconds.

Once it’s simmering blitz the mixture with a hand blender.

This will then resemble the Katsu curry sauce we all love and know!!

This whole method took 10 minutes. Probably take you that to warm through a shop bought sauce…..YET NOT AS REWARDING!!!
I served mine with breaded king prawns, rice and a coriander and chilli salad. The breaded prawns were on offer so the sauce was made to compliment them. In fact, the sauce took less time to make than they did in the oven! To be honest, it’s taken longer to write this blog than it did to make the sauce.
