
As costs are sadly increasing as is the waist line as we become older we’ve been looking at cost effective cooking which is healthy. My partner picked up a book by chance from a charity shop by Joe Wicks. Needless to say, we now have 6! Ok many of the recipes are duplicated but if you get past that, so many are creative, healthy, tasty along with ingredients are repeating across many dishes which helps costs obviously. I would certainly recommend his books. You will also see a common theme with the ingredients with utilises them to the full and prevents food wastage.
Dish 1. Easy peasy Japanese-y curry.

Simple ingredients- coconut oil, spring onions, coriander stalks and leaves, garlic cloves, ginger, a large potato, a large carrot, chicken thighs, curry powder, chilli powder, plain flour, chicken stock and served with rice. Recipe taken from Joe Wicks – Cooking for family and friends.
Dish 2 – Tikka masala, halloumi & chickpea kachumba.

Ingredients- tin of chickpeas, 1/2 small red onion, 1/2 cucumber, a large tomato, cayenne pepper, salt and pepper, juice of a lemon, halloumi, coconut oil, tikka masala, mint leaves from the garden. Recipe taken from Joe Wicks – 30 day kick start plan.
Dish 3 – Chicken & chorizo filo pie.

Beautiful dish, not only a very tasty dish but I used the remaining homemade tomato soup as the base.
Ingredients- butter, chorizo, chicken breasts, a large red onion, 2 peppers (red & green) smoke paprika, dried oregano, tin of cherry tomatoes ( I used the tomato soup) salt and pepper, red wine vinegar, filo pastry, flaked almonds. Taken from Joe Wicks – 30 day kick start plan.
Dish 4 – Tandoori chicken burger with cucumber raita.

Ingredients- sweet potato to make wedges, chicken breast, tandoori curry paste, salt and pepper, coconut oil, brioche bun, 1/4 of a cucumber, Greek low fat yogurt, garam masala, iceberg lettuce, lemon juice and premade crispy onions. Taken from Joe Wicks – 30 day kick start plan.
Dish 5 – Bombay potato hash with halloumi.

Ingredients – 6-8 new potatoes, coconut oil, small onion, salt and pepper, garlic and ginger paste, cumin seeds, coriander seeds, curry powder, frozen peas, halloumi and mango chutney. Recipe taken from Joe Wicks – 30 day kick start plan.
Dish 6 – Green lentil spinach daal with poached egg with crispy onions.

Ingredients- coconut oil, garlic and ginger paste, curry powder, tin of green lentils, salt and pepper, egg, spinach leaves, chilli sauce & crispy onions. Taken from Joe Wicks – 30 day kick start plan.
Dish 7 – chicken tikka baguette.

Ingredients- tomato purée, garam masala, turmeric, garlic cloves, juice of a lemon, chicken breast, coconut oil, 1/4 red onion, large baguette, mango chutney (used as a butter to flavour the baguette) shredded lettuce, coriander.
Dish 8 – Pork chops with cheesy chorizo sprouts.

Ingredients- Brussels sprouts, chorizo, butter, onion, garlic, white wine, chicken stock, double cream, Gruyère cheese, cheddar cheese, parsley, salt and pepper, pork chops and watercress to serve.
Dish 9 – Chicken breast stuffed with pesto, sun dried tomatoes and mozzarella wrapped in Parma ham and grill vegetables.

Ingredients- chicken breast, Parma ham, green pesto, sun dried tomatoes, mozzarella, salt and pepper, broccoli, carrots.
A number of other dishes have been made but no record has been kept so I’ve just tried to showcase a few.
