
I simply loved these. At first you think….I can’t make this. However, when you actually drill down into the recipe you realise how simple these are to make, such a great tasty starter. Recipe taken from the great Dan Toombs.
Ingredients- 250g of chicken thighs ( I only ever use chicken thighs as far more flavour) cut into small cubes, 1/2 tsp ground turmeric, 3/4 tsp garam masala, 1/2 tsp chilli powder, pinch of salt, 3/4 tsp of garlic & ginger paste, 2 tbsp of finely chopped coriander, the white of a small egg, 65g gram flour, sparkling water and rapeseed oil for frying.
Method- place the chicken in a large bowl & mix with the turmeric, garam masala, chilli powder & a little pinch of salt to cover the meat. Allow this to sit for 20 plus minutes.

Stir in the garlic & ginger paste, coriander & egg white.

Once this is mixed in add the gram flour a little at a time costing the meat & adding a little sparkling water from time to time.

Continue mixing until you have a nice consistency.

Heat the rapeseed oil. When the oil is around 170-180 C fry your chicken pieces in small batches. Too much in the oil at once will lower the temperature of the oil and ultimately take longer to cook.

Once cooked, set them aside ok kitchen paper whilst you cooking the rest.

I served these up with shredded iceberg lettuce and red onion to make a little salad.
