The more I make these pastes the more I enjoy the process. Nothing better than making your own pastes as this gives you total satisfaction, well it does me anyway!!!

This paste will compliment the Thai yellow chicken curry about to make. Again, the recipe is taken from the legend that is Dan Toombs. If you haven’t heard of him….why not??

Thai yellow curry paste ingredients….and yes the alcohol isn’t for the paste, it’s for the chef!!

Ingredients- 1 1/2 tsp of coriander seeds, 1 1/2 tsp of cumin seeds, 1/2 tsp of seeds from cardamom pods, 1 1/2 tsp white pepper, 12 dried red chillies soaked in boiling water for 30 minutes and cut up, 1 tsp of galangal, 1 1/2 tsp turmeric powder, 3 kafir like leaves with stalks removed, 3 shallots, 10 or so coriander stalks, 1 lemongrass stalk & 1 tsp of fish paste.

Method- dry roast the coriander seeds, cumin seeds and cardamom seeds until nice and fragrant. Remove from the heat, add to a pestle and mortar and grind to a powder.

Take the remaining ingredients, them to a blender along with the ground spices and blitz…….it’s as simple as that!!! Why wouldn’t you make your own paste now??
