I love scallops. Due to most supermarkets and fishmongers moving to hand dived method of catching scallops the prices have shot up….and rightly so. Sustainable fishing practices should be put into place fully to protect our fishing stocks. Sadly though due to this cost rise scallops aren’t something I’d pick up nowadays. Thankfully these were on offer. Now, it’s said you shouldn’t purchase fish from supermarkets or fishmongers on Sundays or Mondays as they’ve had no deliveries…..but as these were reduced I couldn’t resist.

Hand dived scallops

I think if you’ve read my site & blogs I’m fascinated with Asian / Indian food. So, having picked up these scallops it had to be an Asian inspired dish!

The beauty of this dish was that all the ingredients for us are standard cupboard products so no additional purchases were required.

This dish is made up of a simple cooking sauce. The recipe is an old one I’ve used many times from the king of the sea – Rick Stein. However, he does have this recipe down to steam the scallops but I decided to grill these instead.

Ingredients- 3 tbsp dark soya sauce, 2 tbsp of sesame oil, 3 spring onions, an inch piece of fresh ginger finely diced, a good handful of fresh coriander. It’s as simple as placing all of the above in a bowl and mixing well.

Whilst the grill was warming I covered the scallops in the sauce and let the flavour party begin!

Once under the grill the cooking only takes 3/4 minutes max.
