Lamb seekh kebabs….a touch of class 👌

I’m not one for making starters. Not sure why! Recently I’ve decided to push myself a little further. One of the two I’ve made in recent weeks were these stunning and simple lamb seekh kebabs. I’ll be repeating these over and over again due to how good they actually were. I really can’t understand why I’ve not made these before. So so good it’s unreal. Dipped is some shop bought mint sauce…..oh my days !!!

Ingredients- 500g of lean lamb mince, 1 egg, 1 tbsp of diced green chillies, 1 onion finely diced , 1 tbsp of toasted ground coriander, a good handful of fresh coriander finely chopped plus 1 tsp of salt.

Method – place all the ingredients in a mixing bowl.

Push the ingredients through your hands for 5 minutes or so. This will warm the lamb slightly which will kind of create a paste like mixture. The egg will act as a binding agent bringing everything together.

Once you’re happy with the mixture divide the mixture into small golf ball size balls.

These already smell great due to the toasted ground coriander!! Ideally you want the textured twisted skewers, sadly I don’t have these so I had to make do. These are brilliant for the bbq, sadly it’s November and I won’t be standing outside to do these!!! I preheated the oven 200 degrees.

Please note – when making the sausage shapes along the skewers make sure your hands are wet. This helps the binding again as it helps keep the meat in shape.

Slide the golf ball pieces of meat onto the skewers. Push the meat along the skewers to form the the sausage shapes.

These were then roasted for 10/15 minutes, no longer.

Absolutely stunning. So flavoursome it’s unreal…the real deal!! A nice bit of lemon over the top with mint sauce….oh my days!!
