Butter Paneer 👌

I love paneer, it’s as simple as that. Some people would turn their nose up at a cheese curry…..yes….I agree when you say it like that it doesn’t sound that appealing. However, paneer is simply stunning.

Butter paneer is a great dish. It’s a very quick dish to cook, a handful of everyday ingredients that most households will have, it’s a cost effective dish with an amazing flavour.

For the sauce – in a blender place 1 tin of chopped tomatoes, 3 cardamom pods, 2 cloves, 1 Indian bay leaf ( normal bay leave is fine) 1 tsp of chilli paste & 1 1/2 tbsp of garlic & ginger paste. Whiz the blender making a thick sauce, this will take 2/3 minutes. Once you’re happy with the thickness pass the sauce through a sieve removing any leftover hard pieces the blender has missed. This should leave you with a stunning flavoured tomato sauce.

Empty the sauce into a pan, add 1 green chilli which has been split length ways. Bring to a simmer. Now you add your butter, a little at a time. Ideally you need between 50g to 80g. Place small knobs of butter into the sauce stirring it in. This will make a beautiful velvet sauce. Add your cubed paneer and simmer for 3/4 minutes.

To finish the dish add a pinch of salt, a touch of single cream and finely chopped coriander.

I served mine a flavoursome dhal.

Ingredients – 1 tin of chopped tomatoes, 3 cardamom pods, 2 cloves, 1 tsp of chilli powder, 1 Indian or normal bay leaf, 1 1/2 tbsp of garlic & ginger paste, 1 green chilli, 1 standard packet of paneer – cubed, 50-80g of butter, salt, touch of single cream, fresh coriander.
