
This is quite simply a stunning dish. Taking your everyday mushrooms to another level just by doing a simple marinade. Iām finding the more I learn about food and flavour combinations the more Iām understanding food is about planning, preparation and marinades.
For the marinade – 2 tbsp of garlic & ginger paste, 1 green chilli finely chopped, 1 tsp ground cumin, 1 tbsp smoked paprika, 1 tsp garam masala, juice of 3 limes, 200ml plain Greek yogurt, 1 tsp rapeseed oil, 3 tbsp finely chopped coriander with salt & pepper to season.
This dish is not only ideal as a roasting dish on skewers but a perfect dish for the bbq!!
Take all your ingredients and mix well. Add your mushrooms and coat well. Allow this to marinade for an hour.

Once the mushrooms have had a flavour party place on the skewers and either roast or on the bbq.

Gently roast the mushrooms. Whilst the mushrooms are cooking take the rest of the left over marinade, place in a frying pan and heat gently. Just simmer to make a sauce.

When the mushrooms have cooked, season well and add back to the sauce.
I served mine with fluffy basmati steamed rice.

This dish is so simple yet so satisfying. Beautiful plate of food.
