
This simple and quick dish is a healthier version than your traditional balti. Balti’s are usually cooked with lots of oil over a high heat so the oils cook off. As this is a healthier version the amount of oil has been reduced and the cooking process is a little slower.
Ingredients-
1 tbsp of rapeseed oil, 1/2 onion diced, 1 1/2 tsp of garlic and ginger paste, 1/2 tsp of cumin, 1/2 tsp chilli powder, 2 tsp of curry powder, 3 tbsp of tomato purée, 1 cup of pre-made base sauce, 100-200g of diced chicken ( I prefer thighs), 1 tin of black beans drained and washed, salt and coriander to garnish.
Start be heating the rapeseed oil then adding your onion to fry for 3/4 minutes. Once your onions looked cooked added your spices along with the garlic and ginger paste. Then mix well coating the onions.


This should make the kitchen smell amazing. Add the tomato purée and mix well.


Then add half of your pre-made base sauce and again mix well. Then leave alone for a few minutes without stirring. The edge of the pan will start to caramelise and this is a flavour sensation waiting to happen.
Add your chicken and black beans with the remaining base sauce. Bring to a rolling simmer and leave alone for 10 minutes.

The final dish is mouthwatering. A very tasty dish cooked under 15 minutes. The rice was cooked beforehand and ready to go once the balti mix was ready.
This dish believe it or not would easily feed 4 people yet cost £5 to make. The most expensive part being the chicken thighs. You don’t have to be an amazing chef to produce this. The stunning flavours do all the work for you plus it’s a very healthy dish.
