
The nights are drawing, I’m getting back into the swing of work. So in order to regain focus I’ve decided to put more effort into my cooking which if you ask me is long overdue!!!!
I love a good Jalfrezi, I love paneer, so it makes sense to make a paneer Jalfrezi right, yes totally. The perfect way to unwind on a Friday night in the kitchen.
Ingredients- 4 tbsp of rapeseed oil, 1 onion finely diced, 1 red pepper diced, 2 green chillies diced, 2 tbsp of coriander stalks finely chopped, 2 tbsp of garlic & ginger paste, 6 tbsp of tomato purée paste ( 2 tbsp of tomato purée with 4 tbsp of water mixed), 2tbsp of mixed curry powder, 1 tsp chilli powder, paneer cubed, 2 tomatoes quartered, 2 cups of pre-made base sauce, 1 tsp garam masala, salt, fresh coriander and a green chilli split lengthwise.
Marinade for paneer- 1/2 tsp of salt, 1/2 tsp of chilli powder, 1 tbsp of garlic and ginger paste and 2 tbsp of vegetable oil. Mix all the marinade together. Allow it to relax to take all the flavours on for an hour or so.

Heat a little rapeseed oil and gently fry your paneer to colour and crisp the outside. Once they have a slight crust remove from the heat allowing them to cool, it’s very difficult not to nibble them at this stage 😯.

Heat the rest of the oil. Add the onion, red peppers, green chillis and coriander stalks and fry but keeping a crunch.
Stir in the garlic and ginger paste and fry for a minute or so. Add the tomato purée mix, mixed curry powder, chilli powder and 1 cup of pre-made base sauce. This will come to a boil preventing yourself from stirring. Allow the sides to slightly caramelise, stir these flavours in and add the rest of the base sauce.

Add your green halved chilled, quartered tomatoes and paneer.

Add the salt and the chopped coriander and garam masala.

Fantastic tasting dish.
