Homemade Shawarma Kebabs

This dish was so simple. Again showcasing that marinating meats takes cooking to another flavour level.

Ingredients- chicken thighs cubed, 2 tbsp of garlic & ginger paste, 5 tbsp of rapeseed oil, 1 tbsp of ground cumin, 1 tbsp of ground coriander, 1 tsp of allspice, 1/2 tsp of cinnamon, 1/2 tsp of turmeric, 1 tbsp of paprika & a good pinch of salt & pepper. This can be marinated for 2-24 hours. The longer the better.

Shawarma marinade mix.

I used big chunks of red onion, red peppers & green peppers.

These were cooked over a high heat on the BBQ. Just sit back with a cold beer and watch magic happen!!

The server, these were placed in nann breads with mint sauce. Heavenly.
