
I love roast potatoes. If I had my way I’d eat them everyday. Nothing better than having a flavoursome roast potato with rosemary to make everything better. Especially when the rosemary and potatoes are from your own garden!!
I usually finish the cooking with the rosemary, lovingly placing the rosemary in between the potatoes 15 minutes or so from the end.
To compliment the roasties, homemade gravy from the chicken juices and onion which was placed under the chicken when roasting. I used the water saved from the parboiling of the potatoes before they went into the oven.
