Lemon & coriander chicken 👍

Lemon & coriander chicken.

Recipe from Reza Mahammad.

Ingredients- 150g yogurt, finely grated zest and juice of 1 lemon, 2 onions finely chopped, 4-6 tbsp of ghee or oil, 1/2 tsp turmeric, 5 garlic cloves, 2 tsp grated ginger, 1 tsp chilli powder, salt, 900g chicken thighs cut into small cubes, 3 green chillies chopped and 6 tbsp chopped coriander.

Method – Lightly whisk the yogurt and half of the lemon zest and set aside.

Whisked lemon zest and yogurt.

Fry the onions in the oil or ghee until the nicely change colour.

Add in the turmeric, garlic, ginger, chilli powder and some salt. Stir fry for a few seconds then add the chicken.

Once the chicken is cooked and taken on the flavours add in the yogurt mixture a little at a time.

Keep stirring until all the flavours have come together.

Reduce the heat and simmer for 10 minutes.

Now add the green chillies, coriander, lemon juice and the remaining zest.

Stir well and simmer for another 10-15 minutes.

I served with fluffy steamed rice.
