
I will never get bored of marinating.
Simple way of taking food to another level with minimal effort. Just takes planning. The beauty of having a good marinade is that you hardly have to do much in the kitchen. The oven does the rest.

Ingredients – 1 tbsp of garlic & ginger paste, 4 tbsp of white wine vinegar, 1 tsp rapeseed oil, 1 tsp of chilli powder, 2 tbsp tandoori masala powder, 1 tsp garam masala, 1 1/2 tbsp yoghurt & a good pinch of salt.
Method – it’s as simple as taking a sharp knife making slits on the skin of the fish. I’ve used sea bream as that’s what was on offer, sea bass would be beautiful! Put all the ingredients in a bowl in mix well. Rub the marinade all over the fish plus inside. Leave to sit having a flavour party for 30 / 60 minutes.
I then used skewers through the fish to roast over a dish allowing the air to circulate in the oven. This dish would be perfect over the hot coals on the BBQ.

I roasted the sea bream for 30 minutes and served with precooked dhal, steamed rice, onion salad and naan bread.
