Authentic chicken handi – perfect Friday night escapism 👍

Terrible week at work. Everyone counting down to the weekend. Even on Thursday morning I was trying to plan a curry for Friday night which wouldn’t be to taxing, a way of shutting off, economical, be able to have a wee drink to leave work behind. Can’t say much more than that in the public domain.

Chicken handi was the perfect dish for this. Magical.

Not much thinking about, simple everyday ingredients plus one pot cooking which is always a bonus.

Ingredients- 1/2 cup of ghee (yes a lot), 2 red onions diced, 2 tbsp of garlic and ginger paste, 1 tsp of cumin seeds, 2 tomatoes diced, 4 green chillies, 1 tsp of turmeric, 1 tsp of chilli powder, 1 tsp of coriander powder, chicken thighs, 125ml water, 1 cup of natural yogurt, 1/4 cup single cream, 1 tsp garam masala, salt to taste, chopped coriander and chopped ginger to finish.

Method – heat the ghee. When visibly hot add the onions and fry for 10 minutes or so but do not burn!! Stir in the cumin seeds, garlic & ginger paste and fry for 30 seconds. Add the tomatoes and green chillies, stir to combine all the flavours. Once coated add all of your ground spices and chicken stirring for 3/4 minutes allowing the chicken to be coated in the flavours as it browns. Add the water, cover and simmer for 15 minutes. At this point it’s very important you pour yourself a good drink!!!!

Once the water has thickened to become a sauce, add your yogurt, a tbsp at a time whilst simmering. Add your cream, garam masala, serve and garnish with the chopped coriander and ginger.

Easy, simple dish.
