Chinese chicken curry ‘fake away’ – the dish that started it all off !!

Chinese chicken curry.

Love this dish. The dish the gave me the ‘eureka’ moment I needed to understand spices, flavours and how simple cooking can be.

Everyone loves a curry from the local Chinese takeaway right??? If so, please feel free to have a go and you’ll realise how simple it really is. Full of flavour and you wouldn’t know it’s not from your local takeaway.

Ingredients- 2 tbsp of vegetable oil, 1/2 tsp of garlic paste, 1/2 tsp ginger paste, 2 tbsp of plain flour, 2 tsp of curry powder, whatever the amount of onion you require ( I leave mine in the big petals like the takeaway) 1/2 salt, 1/2 tsp of chilli powder, 1 tsp of paprika, 1 tbsp of tomato purée & 2 cups of water, 2 cubed chicken breasts and a handful of frozen peas.

Heat the oil, cook off your chicken. As they start to colour remove and cover to keep warm.

Using the same oil just colour your onion petals, remove and add to your chicken and cover to keep warm. I also used up some mushrooms that needed using.

Add a bit more oil, heat, add your garlic and ginger paste. Let it bubble for 10/15 seconds. Add your flour and curry powder to create a paste. Mix in the pan / wok for 30 seconds, add the chilli powder and paprika and mix well.

Add a bit of water then your tomato purée, add a touch more water, a bit at a time to keep the curry thick. Stir all the time during this process.

Add your chicken and onion with frozen peas, the curry will start to thicken. Season with salt.

It will blow your mind.
