Bicol Express – Filipino curry !

This dish was stunning! Another dish I’d cooked for National Curry Week. Only slight downside was the shrimp paste I used. The shrimp paste was brought back from Singapore by a friend who was working out there with JLR. It was stronger than anything I’d previously used and the smell hung around for days…..lesson learnt!!…

Rajma masala ❤️

I cooked this wonderful dish as part of my National Curry Week celebration at the start of October. This is a fantastic meat alternative curry which is full of flavour. My first attempt at this dish and a dish I’ll cook again for sure. Ingredients- 3 tbsp of rapeseed oil. 1 tsp of cumin seeds….

Vietnamese fish sauce chicken wings !

This dish isn’t for the faint hearted!!! Not the taste or heat from the chillies……but the smell of fish sauce! The fermented fish which is how the sauce is created really causes the kitchen to have a lasting strong smell!! If you can get over the smell, this is quite a nice tasting and cheap…

🌶️Chicken Vindaloo…..potential stinger🌶️

Very nervous about cooking this dish. All the cooking I do is based around flavour rather than wanting to blow my head off with heat and lose the ability to enjoy the meal. When I see those ‘macho’ guys sitting in a restaurant trying to convince their friends and family they are enjoying the meal…

Lamb keema shimla mirch – simplified version ❤️

After recent times, kitchen time was needed. I’ve not felt like posting for a while as I’ve not done much cooking, however this little gem cooked last night sparked a little flame inside. I’ve cooked a more complexed version of this dish before but to try and light the flame again I made this simplified…

Korean salmon & broccoli tray bake ❤️

This beautiful simple dish has to be one of the easiest things I’ve made yet one of the tastiest!! Again, looking to remove the meat content and focus on fish. A simple marinade, humble ingredients, then roasting in the oven, as simple as it gets, especially as the marinade consists of 5 ingredients!!!! The star…

Ayam Masak Merah – red cooked chicken from Malaysia ❤️

Ayam Masak Merah – ‘red cooked chicken’ from Malaysia ❤️ One of the challenges I enjoy is finding recipes from the books I have to try and utilise left over ingredients I have from previous cooking plus with whatever we have in the fridge! From the curry I cooked at the weekend I have a…

Simple & easy Pathia ❤️

I’ve blogged before about my love for a pathia. Pathia was my first introduction to Indian food aged 19 from a little restaurant in Coleshill. It’s one of those food memories you’ll never forget. I love this ‘hot, sweet & sour’ dish. A perfect mix of flavours basically created by Kashmiri chill powder, sugar, mango…
