
This week has all been about focus. I’ve upped the ante with regards to fitness and working my heart. From Tuesday morning until Friday evening I’ve walked 32 miles (70,000 plus steps) to work and back each day as the weather has changed here in the UK.

After doing the exercise daily by the end of the week with a few sore bits on the body I just fancied a quick meal so I could relax after a weeks work.
I found this recipe from the legend that is Ken Hom – beef in oyster sauce. You have to quickly prep the meat and place it in a simple marinade for 20 plus minutes other than that the cooking takes less then 10 minutes.
Ingredients-
450g (ish) of lean beef cut into strips, 2 tbsp of light soy sauce, 2 tsp of sesame oil, 2 tsp of cornflour, 1 tbsp of rice wine vinegar, 3 tbsp of ground nut oil, 1 red pepper cut into chunks, 1 green pepper cut into chunks, 3 tbsp of oyster sauce, 2/3 spring onions cut into pieces and I added a bag of beansprouts.
Method –
To make the marinade. Add the Soy sauce, sesame oil, cornflour and rice wine vinegar to a mixing bowl and give the mixture a gentle stir.

Add the beef strips to the marinade again giving it a gentle stir to coat the beef. Ideally this should be done for 20 plus minutes. I did mine for an hour.

Heat your wok. As the wok starts to smoke add in your groundnut oil and swirl it around the wok. Add in your beef and stir fry it so it’s nice and brown. You might need to do this in a couple of batches as you don’t want to overcrowd your wok.

Once your beef is cooked place it in a sieve over a bowl so the juice run out. After you’ve cooked both batches drain the wok of the oil and give it a wipe. Be careful as it will be very hot !!

Return your wok to the heat. Add in the peppers and stir fry them. You want to retain the crunch.

After a couple of minutes add your oyster sauce and give the wok a good stir coating the peppers.

After a minute of stirring I added a bag of shop bought beansprouts and give them a big stir. These only take a couple of minutes to cook.

After a couple of minutes stirring the beef was added back in the wok and again stirred around the wok to take on the oyster sauce plus add in the chopped spring onions.

The dish was served as it was, cooked in 10 minutes. A quick and healthy meal to end the week.
