Homemade wild garlic pesto

As I write this in the middle of April spring is firmly taking its grip. Flowers are looking great as the bulbs are breaking through and the garden & countryside is starting to thrive.

We have a brook near to where we live which every year is covered in wild garlic. The smell literally draws you in. This year curiosity got the better of me.

We needed some exercise so my youngest and I went on an adventure. Anychance for him to get his bike out and he is away.

We did a 3 mile round trip to collect and harvest some of the wild garlic, enough to fill a Sainsbury’s (other supermarket bags are available, always wanted to say that like they do on the TV😂).

I got the leaves home, placed them in a bowl and sorted through removing anything that shouldn’t be there.

They were then placed in the washing up bowl and given a good rinse.

Now I didn’t do quantities on the other ingredients but I added the following to a blender and whizzed it all together

120g of Pine nuts, juice of two lemons, big handful of grated Parmesan cheese, big handful of parsley, lots of olive oil and big handful of salt and pepper.

Blitzed together making the kitchen smell great!!

No it’s not Kermit in a blender!!

No filter was used either for the photos…pure natural colours ❤️
