Chilli Paneer Stir Fry

Part of my food journey to experience food and recipes I’ve not witnessed before. This recipe from Dan Toombs is a great example. The flavours are amazing. The dish brings together cultures, delicious flavours along with the simple nature of cooking was most people wouldn’t even attempt as they think they are far too complicated to even attempt, even me before my food journey.

For me this is a beautiful dish, not only the flavours that come through but for the paneer. Having been a pescatarian for a number of years paneer was my ‘go to’ ingredient for my Indian cooking, I ABSOLUTLEY love PANEER. A flavour that must be tried.

The dish has two parts, the main ingredients and the sauce which can be made in advance so the actual cooking takes minutes. The ideal dish if you’re in a rush, which most of us are with life & family commitments.

Main ingredients – 3 tbsp of rapeseed oil, 1 packet of your shop bought paneer cut into cubes, mixed peppers cut into the same size bite size pieces as your paneer, red & green is best for this dish & 3 spring onions.

For the sauce – 250ml of tomato ketchup (yes you read that correctly) 2 tbsp of a hot chilli sauce – use whatever sauce you wish, 5 garlic cloves finely chopped, small pieces of ginger finely chopped, 2 tbsp of light soy sauce, 1 tbsp of cornflour, 1 tsp of ground black pepper, 1 tsp of white pepper & a pinch of salt to balance the dish.

Method –

Take all the ingredients for the sauce and combine them in a bowl. Again as mentioned, this can be made before or when you’re ready to cook. YES IT’S AS EASY AS THAT!!

When you are ready to eat, preheat a large pan then add your rapeseed oil. When hot add the cubed paneer allowing it to brown flipping them over until the paneer has a nice firm crust on them. If like me you wont be able to resist taking a few to eat at this stage…..what??? It’s a cooks perk isn’t it??

When you’re happy with the paneer add peppers, allow them to cook but not to much as you want to retain the nice crunch then add the sauce, allow this to warm through. Its as easy as that.
