
Regional dish taken from Rick Steins India tv series & the book that accompanied it.
Fantastic dish which an economical dish full of flavour.

Ingredients- 3 tbsp vegetable oil, 6 hard boiled eggs, 1 tsp turmeric, 1 tsp Kashmiri chilli powder, 400ml coconut milk, 2 red onions diced, 4cm finely shredded ginger, 3 green chillies thinly sliced, 1/2 tsp salt, 1 tsp sugar, handful of chopped coriander & 1/2 tsp garam masala.
Heat the veg oil in a heavy based saucepan, add the boiled eggs & fry for 1-2 minutes.

Add the turmeric & chilli powder & cook for another 30 seconds.

Stir in the coconut milk & bring to a simmer.

Add the onions, ginger, chillies and salt and simmer for 5 minutes, stir in the salt, sugar, coriander then season the garam masala.

I served this dish with steamed rice and breads.
